FLAVOR

Balanced acidity delivers fruit forward notes of black currants and dark fruit. A delicate sweetness compliments the smooth tannic profile and carries through to woody notes of vanilla and cedar shavings on the finish.

A select blend of Finnriver organically grown apples, locally sourced wild-harvested apples, and organic Granny Smith and Pink Lady

apples.


CIDERMAKER NOTES

A blend of organic and wild-harvested apples from all over the region come together in this cider inspired by high-acid, fruity red wines such as Pineau d'Aunis. We co-fermented our apple blend with nearly 900 pounds of organic whole currants from Tahlequah Farms. Primary fermentation was slow and cool and took nearly two months to complete. After fermentation the cider was racked and aged on a blend of French and American oak. Lightly carbonated and best served room temperature or slightly chilled.


SERVING SUGGESTIONS

A cider for watching the sunset with a plate of fine charcuterie. Enjoy with heartier fare such as roasted rabbit or sautéed duck, grilled salmon with savory herbs or a salad with braised beets.
