AROMA & FLAVOR


Aromas of fir sap and fresh cut timber lead the nose to a fruity finish with notes of berry preserves and vanilla.


APPLE & FRUIT VARIETIES


A mix of locally foraged and wild harvested apples blended with Finnriver grown Perry pears.


CIDERMAKER NOTES


For this uniquely inspired cider we sourced Douglas Fir boards harvested by the Jefferson Land Trust from the Chimacum ridge and carefully toasted them to a medium char. We then crafted a cider from a blend of locally sourced apples and Finnriver grown Perry pears which we aged on the toasted fir for three months. During the aging process we also added a blend of black elderberries, blueberries, and wild plums sourced from here in the Chimacum valley.
