Pomme, the French word for apple, is the root of Pommeau, a traditional alcoholic drink from northwestern France, believed to date back to at least the 16th century. By blending fresh apple juice with high-alcohol apple brandy and aging the mixture in barrels, farmers preserved the sweetness and complexity of the orchard. Now Finnriver is celebrating our 15th anniversary with the special release of a ten-year-aged Pommeau.
The story of Finnriver’s Pommeau goes back to our early days, around 2012, when co-founders Keith Kisler and Eric Jorgensen first became captivated by the traditions of aged brandy and learned about the French approach to crafting Pommeau. They were struck by how Pommeau required the most charismatic apples, along with healthy doses of patience, alchemy and trust. Given the chaotic whirlwind of starting up a farm and fermenting operation, Pommeau symbolized a slower pace, an extended timeline, and a sense of future possibilities.
Finnriver’s first Pommeau was crafted that same year under the guidance of cidermaker Chris Weir and mentor Drew Zimmerman, recently retired from Red Barn Cider in the Skagit Valley. This small-batch production began with a blend of heirloom cider apples: Kingston Black, Yarlington Mill, and Dabinette. Drew’s wisdom guided the team with the occasional expletive and a more candid variation of: “What goes in, is what comes out.” In other words, you can’t use Granny Smith apples to make Pommeau— the apple selection matters. The result was a 2014 release that marked the beginning of Finnriver’s commitment to this extraordinary style.
In subsequent years, Andrew Byers, cidermaker and co-owner, began setting aside portions of each batch for future blending. “This is the whole premise of Pommeau: to save a bit of the harvest for the future. Each vintage is a picture of a harvest,” says Byers.
Chris Weir returned to Finnriver in recent years to take the lead as cidermaker and championed the idea of a full fledged release of a ten-year aged Pommeau, drawing inspiration from his deep dive into the craft of aging scotch, bourbon, and Japanese whiskey. He shares, “There’s no rushing Pommeau. I love the entire process. It’s slow, deliberate, and deeply satisfying to witness the transformation over the years as it ages into its own unique self. It can't be rushed. There are no shortcuts or work arounds to speed it up. I think it really speaks to Finnriver's dedication and commitment to the craft and art of fermentation. This ten year release showcases a depth of complex elegance.”
Andrew adds: “This Pommeau represents the very best of Finnriver. The finest apples we grow, the time-honored barrels, and the alchemy of patience. It’s a time capsule of excellence—a way for us to share a moment in time with our community.”
As Finnriver celebrates its 15th anniversary as a cidery, we are honored to share this 10-Year Pommeau. After 15 years, the trunks of our orchard trees have grown thicker, their roots reaching deeper into the soil. In much the same way, our community relationships have strengthened and deepened—a profound and joyful parallel. This Pommeau embodies the artistry of a time-honored craft and the spirit of celebration. And as cofounder Crystie Kisler has often said, “The Pommeau reveals layers of complexity, and reminds us that many things do get better with age…”
Our 10 year Pommeau is available for purchase online, although we highly recommend picking up this precious cargo in person at the Cider Garden or at a Farmer’s Market.
