Our Cidermaker Series bottles are limited edition cider projects inspired by the seasonal creativity of the cidermaking crew and the appearance of local, seasonal fruit that generally arrives via neighbors, crew members or farmer friends. Each Cidermaker Series release is made in a small, one of-a-kind batch and gives the crew the freedom to try new ingredients,approaches and techniques, such as ‘souring’ or using unusual yeast strains. A portion of the proceeds from these bottle sales are shared with the Cidery crew in a profit-sharing program to acknowledge their contribution and efforts. The Cidermaker Series ciders vary from year to year although sometimes these ciders make their way into our regular year-round line-up. Some Finnriver staples that began as a Cidermaker Series include Oak & Apple and Black Oak.
Spearheaded by Finnriver’s new Lead Cidermaker, Chris Weir, this succulent batch draws on his years of experience in the beverage industry. “My favorite part about cidermaking is the experimentation. The day-to-day can be challenging and fun but the most exciting part is trying something new you haven’t done before, and the Cidermaker Series allows for that,” Chris continues, “I really enjoy the robust history of fermentation and it’s exciting to be part of the craft cider world where we are building on such a venerable heritage. With hundreds and hundreds of years to draw on, it’s easy to find an answer to most any problem. But what I really enjoy about cider is that while there are a number of traditional ways to craft it, there’s still a lot of room for experimentation and adventure!”
For this batch, Chris was excited to play with a strain of souring ale yeast that Finnriver had never used before. “Unlike a lot of standard souring yeast strains that give you that funky outcome, this one produces a smooth creaminess, without the barnyard funk. On its own, this strain produces a large amount of lactic acid during primary fermentation, so most people cut this yeast with another yeast to mellow it out. Instead of cutting it, we experimented with arresting fermentation and then filtering to strip out the yeast. We
then racked and aged it on whole organic red raspberries. While I’ve played with a lot of souring yeast strains, I’ve never experienced one that can achieve this level of souring and still maintain a clean and bright aroma and flavor. This cider has a really unique sweet-tart flavor that I’ve never experienced before in a cider,” Chris explains with a smile.
This ruby red cider has quickly become a staff favorite!
